My recent Sunday morning trip to the local IHOP was exactly the chaotic, comforting carb-fest I needed to recover from a long week, proving that sometimes you just need to surrender to the siren song of processed sugar and hot diner coffee. The lobby was packed to the gills with crying toddlers, exhausted parents, and college kids who looked like they had rolled straight out of bed, yet the host managed to navigate the madness and slide us into a classic blue vinyl booth in fifteen minutes flat, easily beating the twenty-five-minute estimate we were originally given. Our table had that signature, slight IHOP stickiness that seems permanently bonded to the wood, but our server, Marcus, was an absolute champion who immediately greeted us with a steaming carafe of surprisingly decent, roast-heavy coffee. He was sprinting between at least six other bustling tables but still managed to keep our mugs topped off and our water glasses iced throughout the entire meal without ever making us feel like we were a bother. When the food arrived, the Colorado Omelette proved to be an absolute beast of fluffy, yellow eggs packed to the brim with bacon, sausage, beef, ham, and melted cheddar cheese, though the onions and green peppers inside were a bit too raw and crunchy, meaning they could have used another minute on the flat top grill to soften up properly. Naturally, the short stack of original buttermilk pancakes stole the show, arriving thick, hot, and golden with those perfect crispy edges that soak up the classic old-fashioned maple syrup like a sponge. I bypassed the strawberry and blueberry syrups in the sticky plastic tabletop carousel because they always taste a bit too artificial to me, sticking instead to the warm classic syrup and a generous smear of whipped salted butter. We also ordered a side of hash browns to share, which unfortunately turned out to be a bit mushy and pale in the middle, a classic mistake that reminded me I need to explicitly ask for them well-done next time if I want that satisfying diner crunch. Fortunately, the hickory-smoked bacon on the side made up for it by being perfectly crispy without crossing the line into burnt charcoal territory. With the total bill coming out to just under thirty-eight dollars for two incredibly stuffed adults, the value is simply impossible to beat in today's trendy breakfast market where a single piece of basic avocado toast on sourdough easily costs twenty bucks. It is definitely not a gourmet, Michelin-starred dining experience by any stretch of the imagination, but for a reliable, unpretentious sanctuary of greasy-spoon comfort and guaranteed food comas, it still hits the spot every single time.

Restaurant was about 80% full with only 2 waitresses. Considering that the service was outstanding vs just good. Food was very good and Robin was friendly way beyond the overload pressure of being short staffed.

We had a wonderful lunch at this IHOP! Our steakburgers were hot fresh and so delicious! Robin was the best waitress and extra thoughtful for our table! We will definitely bring our next trout bus group back here in Seville and asking for Robin!! Best lunch in town!! 🩵😄
